A UNIQUE and therapeutic probiotic and prebiotic tonic made of kvass and jun tea. Lacto-fermented for at least ten days along with Jun Tea, fermented on SCOBY for five days. Then fused together as a second ferment, bottled into recycled sterilised bottles of various sizes. (Council approved) Current Sunshine Coast manufacturers food licence.

Jun Tea - is a naturally effervescent fermented tonic made with green tea and raw honey. It's related to kombucha and, like kombucha, you need a SCOBY (symbiotic culture of bacteria and yeast) to brew jun.
Jun is known as the champagne of kombucha. Feeding the SCOBY with natural honey (a prebiotic) and green tea (instead of the cane sugar and black tea as used in kombucha) has the added bonus of mineralising the tonic and added strains of probiotics and prebiotics. Jun is typically fizzier and less acidic. and can contain up to 2% alcohol.
Modern day Tibet is the most likely origin of Jun, with suggested use by Bon Monks that live there to this day.
Jun contains a multitude of live enzymes and acids and loads of B vitamins essential to health and energy.
Jun is also said to build defenses against allergens, thanks to the honey.
Most Jun brews are dominated by the probiotic Bacillus coagulans or bacteria capable of fermentation including Lactobacillus nagelii, Gluconacetobacter, Gluconobacter, and Komagataeibacter species.
Jun and Di’s other fermented foods are full of antioxidants and probiotics, or live bacteria, that boost the health of intestinal cells, improve immune function and aid in food digestion. Jun acts as a filter, detoxifying your body from the residue left behind in the organs from processed food and aiding in the removal of free radicals. The antioxidants contained in Jun, can kill harmful bacteria, and may help fight several diseases.
Jun is suitable for the GAPS diet and other diets that restrict cane sugar but allow for honey.
Reports suggest that Jun or Di's Living Probiotic Soda can aid individuals with irritable bowel syndrome (IBS) and bloating in reducing symptoms. Although it is not a complete treatment, Jun may be beneficial. The average Jun brew contains about 15 mg of caffeine per 440 ml.
