Di’s Probiotic Dukkah is the Egyptian style condiment consisting of herbs, seeds and spices but is based on her probiotic kvass powder made from fermented kvass pulp. It is typically used as a dip with sourdough bread or fresh vegetables for an hors d'œuvre. Also used sprinkled on soups, eggs, avocado, salad, meat, dips, or cream cheese. Fermented fruits and vegetables can be used as a potential source of probiotics as they harbour several lactic acid bacteria such as Lactobacillus plantarum, L. pentosus, L. brevis, L. acidophilus, L. fermentum, Leuconostoc fallax, and L. mesenteroides.
